FFP provides alternative for Chinese dumplings

FFP Packaging Solutions has developed a modern variation on the traditional bamboo steamer used to cook Chinese dumplings or Dim Sum.

The Northampton-based company was approached by Taiko Foods to help develop a pack using it’s Estersteam microwave steam lidding technology. The dumplings are packed in a clear tray, with the Estersteam film heat sealed to the top. The lidding film incorporates a special valve that allows steam to escape in a controlled way during microwave cooking.

Steam is created in the pack as the food cooks. By controlling the release of steam from the pack the valve contributes to the flavour of the Dim Sum.

As the food cooks, the temperature and pressure increases and the valve opens to release the steam. As it does so, the steam shrinks away from the valve to ensure there is no chance of it resealing and the pack imploding. Despite the pressure the film is peelable, making it easier to open.

Taiko supplies four types of Dim Sum to Waitrose under the brand name Zao.
